Line said that they were experimenting a dessert wine of which they used the last pressing of the juice and add alcohol to it.. the alcohol content is upto 40%! After the 1st fermentation, the process is called Blending, that's when different grapes juices are blended to a specific taste, strength (more chardonnay) or fruity (more pinot noir)

Every blend of champagne has to forwarded to INAO for examination and validation for control. 2nd fermentation... the cork is not on yet.. only cap because another important process to take out the impurities and sendiments will have to be done before aging.
