Garro's Simple Recipes 

Fewer salt, fewer oil, fewer sugar

Lemon Cake (15cm)

Ingredients

60g butter, softened

1 tbsp finely grated lemon rind

1/2 cup (110g) caster sugar

1 egg

1/2 cup self-raising flour

1/4 cup plain flour

1/4 cup milk

Method

  1. Grease 15cm cake tin

  2. Beat the butter, lemon rind and sugar using a mixer until the mixture.

  3. Add the egg.  Beat it until all combined

  4. Stir in sifted flour in two batches with milk.  I used an electronic mixer to beat it until it becomes smooth.

  5. Spread the mixture into the prepared tin.

  6. Baking time -

    • Conventional oven - bake in moderate oven for about 45 minutes

    • Microwave & Grill oven - grill for 10 minutes and then change to combine cooking for another 5-6 minutes or until it's cooked.

You can also add a topping to the cake. 

Topping:

1/2 cup lemon juice

1/4 cup caster sugar
